Visiting Philippines? Try this dessert

  My #1 Philippine dessert is not traditionally filipino. The day I arrived was grey and wet, yet humid. The traffic was a cluttered mess going from the airport. But the start of an authentic Asian experience. It was in September. I am however not reminiscing about my stay, but the smell of caramalized sugar when I entered the kitchen that following morning. The Philippines have its traditional dessert like Halo-Halo and Buku salad that is both delectable, must try frozen desserts. But it is neither of the two that made an impression on me during my visit to the Philippines. I originally began writing this post to share a great delicacy of my first visit to the Philippines.  Being passed off as a filipino dessert, I soon realised that this is not a filipino dessert but, the filipino version rather. Procrastination, the silent killer



Some people write in coffee shops, where it smells like freshly brewed coffee beans, to the sound of steam breathing steam wands and whipped cream guns.

Or perhaps on their balcony, with an espresso, as the sun blend a soft pink into a blueish gray.
I am sitting here, on a staircase, in an alley...under an Indian mango tree. The sun casting leaves onto my shoulders, at the highest tip of the neighborhood. It is cooler here. The wind whispers sweet nothings and calms my soul.

I have patience, probably more than I should have. Persistence overload, if I want something, I will get it. Discipline?...before this post not so much but--

It takes a whole lot of effort and awareness for someone as inconsistent as myself. Today I can feel like writing several posts. Tomorrow I wake up and there will be no post inside of me...continuing for weeks on end. It is when practice something on a regular basis, even when it takes effort, that it soon becomes a habit.

We stumbled into gardening-something I enjoy, but knew very little about- with our eye focused on a future in farming. This is how it all changed. How I grew into the habit of these qualities I need to acquire the things I want.



An orange tree, or poncan (the tagalog for mandarin) takes three to four years to bear fruit. There was no better time to start planting, than then...we do not have the farm yet. But we were not going to wait until we do, have a farm. We don’t know as yet, how long it will take us to acquire this farm, which upon that, it will take another four years for our trees to grow and bear fruit.


Growing these trees from seeds, day by day, little by little had me come to realize just how procrastination is affecting me, how it has affected me even before. If it was not for procrastination, then where could I have been by now.

Within growing these mandarin trees from nothing, I have seen my life, me. Planting seeds everywhere, but not watering them. Not nurturing them on a daily basis so they can grow. These mandarin’s need to be loved to grow.  They need to be cared for on a daily basis. Do they get enough air to prevent parasites or fungus. Do they get enough sun. How much is enough. How much is too much.  Watering and overwatering.  Miss one day, and the their little leaves will show you the neglect.



Isn’t this our lives. Are we not little seeds. Are the things we do not, little seeds we plant. I have come to realize that I am a great planter of things, but terrible at watering. The things I start will germinate but before it reach but just the surface of the soil, it quivers and die.


Don’t just be the water bearer of the things in your life, be the compost. Procrastination is a dream killer. Our dreams is already there for us. We all deserve the best. We are capable of the best. We are just tested and tried, and sometimes defeated by parasites and fungus. Our dreams are for us for our families, for our spouses, this who we do for, whatever we do.  Our greatness is their greatness. Water each other daily, cause sharing a fruit is so much better than eating it alone.
